Banana Flour Pancakes with Berry Yoghurt

Super easy to make, and perfect for breakfast! So quick you can make them in the weekday rush, but indulgent enough to complement a leisurely weekend brunch.

Serves: 2 | Cook Time: 10 mins | Prep Time: 5 mins

Ingredients

  • 1/2 cup banana flour
  • 3 eggs
  • 1tbsp vanilla extract
  • 1tbsp honey
  • 1/2 cup milk
  • 1/2 tsp apple cider vinegar
  • a pinch of salt
  • 1 cup fresh greek yoghurt
  • fresh berries

Method

  1. Whisk or blend all ingredients (except yoghurt and berries) until smooth.
  2. Allow the batter to sit for 3-5 minutes.
  3. Prepare a pan with butter or coconut oil on a medium-high heat.
  4. Pour a ladle-full of batter and cook on eat side for about a minute, or until golden brown.
  5. For the topping, roughly chop some berries and add to a bowl of yoghurt. Fold.
  6. Stack the pancakes up high, pour berry yoghurt and enjoy!

 

 

Healthy Banana Flour Cinnamon Rolls

Fresh, soft, warm, fragrant cinnamon buns… they’re the stuff dreams are made of! This  healthy version takes them from the occasional-guilty-pleasure list to the delicious-yet-healthy list. Perfect for a leisurely Sunday bake, that is sure make your kitchen smell like a divine bakery.

Makes: 12 rolls | Cook Time: 30 mins | Prep Time: 30 mins

Method

  1. Preheat oven to 375 degrees Fahrenheit and grease an 8“x 8” glass baking dish with some coconut oil.
  2. In a large mixing bowl, add the water and yeast. Let sit a minute.
  3. Whisk in the eggs, butter, coconut sugar, and vanilla.
  4. Add the flour, salt, and baking powder and mix well. Let stand a couple minutes to let the dough firm up.
  5. Roll out the dough between two pieces of plastic wrap to 1/4 inch thick.
  6. Brush with ghee or coconut oil.
  7. In a small bowl, mix together the coconut sugar and cinnamon. Sprinkle liberally over dough.
  8. Carefully roll up the dough, starting from one long side. Don’t rush it, and pat with your hands to fix any tears.
  9. Cut the dough into 1 to 2 inch slices and place face up in the baking dish. Press them down a little.
  10. Bake for 30 minutes.
  11. In a small bowl, combine the coconut milk and coconut sugar. Microwave 20 seconds or so and then stir in the banana flour.
  12. Drizzle over warm rolls and devour!

Energy Bar ‘Ice Cream Cone’

Kid-friendly and fun for adults too! A simple recipe with only 4 ingredients, no baking, and a fun twist. This is sure to be a hit at kiddie birthday parties, or even as a Sunday breakfast treat!

Serves: 8 balls | Prep Time: 45 mins

Ingredients

Method

  1. Combine the Mojo Bars in a food processor; process until very finely chopped. With damp hands roll into 8 balls (about 1 tablespoon each) and place in a pie pan. Freeze for 30 minutes.
  2. Remove from the freezer and cut a 1-inch long slit into the top of each ball (this is where the graham cracker “cone” will go)
  3. Line a large baking sheet with parchment paper. Making sure to reserve some chocolate for dipping, spoon melted chocolate into 8 irregular circles on the paper (about 2 inches in diameter0. Dip the bottom half (opposite of slit) of each ball in the remaining chocolate and place on top of the chocolate circles. Slide a graham cracker triangle into each slit with the point of the triangle facing up. Top with sprinkles. Allow chocolate to set before serving.

Can be refrigerated in an airtight container for up to 1 week.

  1. In a high powdered blender add almond milk, frozen cranberries, mixed berries, banana and brown sugar to the mixer.
  2. Start off blending your mixture slowly and once it starts to break up blend faster until the mixture is completely smooth. If the mixture is too thick add in a little more almond milk until you have reached your desired consistency.
  3. Pour your smoothie into 2 bowls and top with desired toppings.

 

Matcha Chia Pudding

Never scramble about for a healthy breakfast again, or end up reaching for that croissant! This Matcha Chia Pudding can be prepared the night before, or even a few nights in advance and stored in batches too. Superfoods + fresh fruits – that’s your breakfast sorted! Though in our opinion, this works just as well as a dessert or day time snack.

Serves: 1 | Prep Time: 5 mins

Ingredients

1 cup almond milk (or any milk)

1/3 cup chia seeds

2 tbsp maple syrup or honey

1 tsp matcha

1 tsp vanilla extract

Optional toppings: shredded coconut, berries, fruits

 

Combine the matcha and chia seeds in the final container in which you want the pudding (we recommend making individual portions).

Mix the milk, maple syrup/honey and vanilla together in a separate container. Once combined pour over the chia-matcha mixture and stir thoroughly.

Let the mixture rest for 5-6 hours in the refrigerator, preferably overnight.

Before serving, top off with seasonal berries or fruits of your choice, and even nuts or dried coconut!

“Avoca-I-do!” An All Avocado Restaurant in Amsterdam

The skyrocketing rise of the avocado in the past few years all over the world has been unmissable. And if this new eatery has anything to say about it – it’s here to stay. The trendiest ingredient of this decade now finally has a restaurant solely dedicated to it!

Three intrepid restauranteurs in Amsterdam have opened up The Avocado Show, where avocados are prominently featured in every single dish and aspect of the menu. Amazed? We were too. While avocados are obviously great on toast, in guacamole, in salads – we were curious to see how an entire menu had been built around the fruit. According to one of the founders Ron Simpson however “The possibilities are endless… Our only rule is that the dishes need to contain the green super fruit in one way or another”.

Some digging up on the internet, and talking to friends who had been there revealed a lot. Firstly, all the dishes are inherently Instagrammable (as evidenced from their over 71,000 followers on the platform). And secondly, each and every single dish truly heroes the avocado. For the savoury they have mini burgers served on avo-buns (!), avocado hot dogs, poke bowls, along with the more usual fare like tacos, toast and egg dishes.  One thing is certain, there is no shortage of choice. Even for dessert, you can choose between avo-shakes, avo-cakes and an avocado based mousse and ice-cream!

While the food and concept sure look like they have knocked it out of the park, the interiors of The Avocado Show evoke the feeling of walking into a rain forest. It’s a literal urban ‘jungle’ of sorts, with lush green foliaged  walls complemented by comfy pink sofas. Fun graphics relating to avocados cover the menu and coffee cups (as though we needed more reasons to put this on our must-visit list).
